Job Description of BOH Roles

Cook

  • Setting up workstations with all needed ingredients and cooking equipment;
  • Making and tasting broth following the SOP to ensure quality consistency;
  • Cooking food in various utensils or stoves;
  • Checking food while cooking to stir or turn;
  • Ensuring food is fully cooked and in great presentation before serving;
  • Maintaining a sanitized and clean working environment in the kitchen;
  • Ensuring all food and other items are stored properly;
  • Checking quality of the ingredients.

Kitchen Helper

  • Thawing and preparing ingredients according to food safety regulations;
  • Making sure the display fridge is well stocked and all the ingredients are presentable;
  • Keeping the sauce bar well stocked and clean;
  • Maintaining a clean and tidy work area;
  • Assisting the on-shift supervisor with inventory and supply maintenance;
  • Unloading food supplies from deliveries and organizing them according to the SOP.
  • Taking out the garbage and replacing garbage bags;
  • Reporting all damaged or faulty equipment to the on-shift supervisor;
  • Completing other tasks assigned by the supervisor.
    Dishwasher
  • Cleaning all dishes, work stations, cooking equipment, and food storage areas in
    accordance with food safety regulations;
  • Sweeping and mopping floors, as required;
  • Cleaning garbage bins on a regular basis;
  • Completing other tasks assigned by the supervisor.
