Job Description of BOH Roles
Cook
- Setting up workstations with all needed ingredients and cooking equipment;
- Making and tasting broth following the SOP to ensure quality consistency;
- Cooking food in various utensils or stoves;
- Checking food while cooking to stir or turn;
- Ensuring food is fully cooked and in great presentation before serving;
- Maintaining a sanitized and clean working environment in the kitchen;
- Ensuring all food and other items are stored properly;
- Checking quality of the ingredients.
Kitchen Helper
- Thawing and preparing ingredients according to food safety regulations;
- Making sure the display fridge is well stocked and all the ingredients are presentable;
- Keeping the sauce bar well stocked and clean;
- Maintaining a clean and tidy work area;
- Assisting the on-shift supervisor with inventory and supply maintenance;
- Unloading food supplies from deliveries and organizing them according to the SOP.
- Taking out the garbage and replacing garbage bags;
- Reporting all damaged or faulty equipment to the on-shift supervisor;
- Completing other tasks assigned by the supervisor.
Dishwasher - Cleaning all dishes, work stations, cooking equipment, and food storage areas in
accordance with food safety regulations; - Sweeping and mopping floors, as required;
- Cleaning garbage bins on a regular basis;
- Completing other tasks assigned by the supervisor.
